Shanghai Splendour

This class is all about fashion and sugar art.  The design is inspired by the beauty of the Mandarin dress – better known as Cheong Sam.

This class is taught by Kelvin Chua, the world famous cake decorator who is travelling all the way from Malaysia to teach this stunning cake at Pretty Witty Cakes!.  This class is suitable for beginners and intermediates (see below for more details).

What you will learn

This class is all about mastering royal icing to achieve an embroidery effect.  You will learn to turn your piping nozzle into a needle and to learn royal icing Embroidery Effect.  You may be a beginner but by the end of the class, Kelvin will have you piping like a pro!

During the class, you will learn:

  • How to prepare your royal icing so it is the correct consistency.
  • How to transfer an image onto cake with royal icing.
  • How to pipe detailed royal icing work in 2D.
  • How to work using the royal icing tube Embroidery Technique.
  • How to create string work.
  • How to achieve “overhangs” where royal icing hangs lower than the cake bottom thus creating a floating effect.
  • How to recreate a beautiful embroidered cake with Cheong Sam buttons using only sugar paste and royal icing.
  • How to properly transport a cake covered in royal icing.
  • A chance to ask any question you can think of about working with royal icing and piping techniques.

Class Times, Level and Equipment

This class starts promptly at 9.30 and runs to approximately 6.30pm.

This class is suitable for all levels including beginners.  However, you must have had experience in covering a cake with fondant before as this will not be taught as part of the class. In this class, on Kelvin’s advise, you will work on a dummy cake in this class as the focus of the class is learning the decoration techniques.  This means you can keep your cake as an example and display cake forever. We will prepare and cover all dummies for you.  If you prefer to bring your own real cake, please let us know and we can send you dimensions.

Everything is explained to you step by step and as with all our classes, all equipment is provided for you.  W e provide everything you need for the class so there is no need to bring anything with you

Your Tutor

This class will be taught by Kelvin Chua, a top expert in royal icing work.  Kelvin travels the world to teach his amazing skills and is a regular guest speaker on the subject.  Kelvin knows so much about royal icing and piping that if he doesn’t know it, it isn’t worth knowing!

You will be given a fact sheet describing the techniques you learnt during the day so you can refresh your mind next time you work in royal icing.  Of course, there are also lots of tips on our Online Tutorials page.

We supply lots of tea and coffee throughout the day and you can take breaks whenever you wish.

Location: Our Shanghai Splendour Class is based at Pretty Witty HQ, a bright, spacious and airy 40 foot kitchen in Crowborough (TN6) on the Kent, East Sussex border.

Price: £295 (includes VAT where applicable).

Time : 9.30am – approximately 6.30pm. This class is next taking place in October

If you want to pay in instalments, you can secure a place with a deposit of £150 and a balance payment one month later.

Travel: We can assist with all travel arrangements including advising on trains and flights, pick up from the airport or train station.  For those coming by car, we have ample private and enclosed parking at the house.
