European Bread Making Class

This class is all about discovering European BREAD!  If you have always wanted to wake up to the smell of freshly baked Parisian style croissants or make your own real German rye bread, Irish soda style bread or delicious treats such as pan au chocolate, pan au raisin or pan au lait, then read on!

Who is the Course For?

This course is perfect for beginners and intermediates who want to branch out into new and exciting types of breads – all made by hand.  Once you know how, you will see how simple it is to make your own breads at home including fantastic European breads.

What you will learn

We have created a full one day class where you will make several types of bread.  All bread is made by hand- there is no sign of a bread-making machine at Pretty Witty Cakes!   During the day you will learn:

French pastries

  • How to mix, shape and bake and authentic French croissants using just 4 natural ingredients.  You will create thirty two layers of buttery loveliness snuggled between thirty two layers of melt in your mouth crispiness – and of course sample along the way!
  • How to make pain au chocolate.  For those of you who love Nutella, there is even a pan au Nuttella option
  • Techniques for preparing the above goodies the day before you need  them, then how you hold them back and then bake them fresh in the morning in the same amount of time as you can make a cup of coffee!

French baguette

  • How to produce shape and bake, authentic French baguette, by hand, in less than two hours from start to finish.  You will use a pate ferment, the finest T55 flour, sea salt, yeast and water.

German rye and beer bread

  • How to make delicious German rye and Beer bread using the best German Beer, dark rye and molasses.

Irish Soda Style Bread

  • Finally, you will have a taste of the Emerald Isle with Paul’s special twist on Irish Soda bread using Guinness stout

Throughout the day, Paul will be there to guide you and answer any bread related questions you can throw his way.  With over 20 years’ experience of bread making, Paul knows just about everything there is to know about bread!

There is also nothing like eating your own fresh bread so you will also have the option to make your own fresh bread for lunch during the day which you can eat there and then (well, as soon as it has cooled!)

  • A whole array of freshly baked bread and pastries made by you.
  • The ability to make breads in all sorts of new and exciting European styles including French, German and Irish breads.
  • A real understanding of how to make proper “artisan” bread by hand so you can, if you choose, opt to make all your own bread.
  • A new found skill which you can use for fun or add to your own skills if you are already working as a cake maker
  • A certificate of completion at the end of the course

Recipes and fact packs

We will provide you with a Fact Pack after the class which will also include all recipes and a reminder of tips, skills and everything covered within the class. Of course, you can also join our Online Tutorials where Paul, Pretty Witty Cakes’ Guest Bread Tutor will demonstrate some of his skills as well.

We supply lots of tea and coffee throughout the day and you can take breaks whenever you wish.

Class times and equipment

This class starts at 10.15 and runs to approximately to 4.30pm.  Classes tend to book early so you will need to book in advance. We will provide tea and coffee throughout the day and of course there will be an abundance of freshly made bread to taste throughout the day.  All the bread you make can be taken home and of course, all bread can be frozen for future use.

This class is suitable for all levels including beginners.  Everything is explained to you step by step and as with all our classes, all equipment is provided for you. As our groups are small but our kitchen is very large (600 square feet) with plenty of space, separate standing work area (necessary for kneading), seated areas for more detailed work, photography area and shop.  We are therefore able to cater for those of differing standards and ensure you get individual attention.

Your tutor

This class will be taught by Paul, who has over 20 years of experience as an artisan baker.  Paul was part of the team in Hambleton bakery that won ITV’s Brtiain’s Best Bakery.  Paul will be on hand to answer any questions you can think of during the day.

Location: Our European Bread Making Class is based in the Pretty Witty Work Shop which is a bright, spacious and airy 40 foot kitchen in Crowborough (TN6) on the Kent, East Sussex border.

Price: £150 (includes VAT where applicable).

Time : 10:15am – 4.30pm

Travel: We can assist with all travel arrangements including advising on trains and flights, pick up from the airport or train station.  For those coming by car, we have ample private and enclosed parking at the house.
