The Baking Master Class

This class is all about BAKING!  If you want to learn the secrets of making scrumptious delights (think chocolate fudge cake, Swiss meringue buttercream, lemon drizzle cake, rich fruit cake and many more), read on!

This class is being taught by one of the world’s leading cake makers – May Clee Cadman from Maisie Fantaisie.  May is a regular Guest Tutor at Pretty Witty Cakes.  Her recipes are second to none and she is going to share her secrets and tricks of the trade so you can learn to bake perfect cakes every time! These classes are EXCLUSIVE so only being held at Pretty Witty Cakes in the UK.

What you will learn in the Baking Master Class.

This class is all about learning to bake perfect cakes every time.  You will be baking from beginning to end so you have hands on experience throughout the class. During the class, you will learn:

The Cakes

May will show you a variety of cake baking methods including how to prepare, make and bake:

  • Classic vanilla bean sponge cake;
  • Light, zesty and moist lemon sponge cake;
  • Rich chocolate fudge cake;
  • Traditional brandy soaked fruit cake (there is an alcohol free option as well)

We will also show you how to properly prepare and line tins, which tins we use and recommend and which to avoid and why.

Buttercreams, fillings and syrups

Every cake is brought to life with the perfect filling. May will show you how to make:

  • Lemon drizzle syrup;
  • Swiss Meringue buttercream;
  • Chocolate ganache;
  • Classic buttercreams and how you make different flavours such as vanilla bean, espresso and orange zest.

Assembling your cakes

As the focus of this class is baking, we will not cover advanced crumb coating, cutting, leveling and stacking.  If you want to learn about these techniques, see our Two Tier Big Cakes class or our Love Birds Cake Class taught.  Instead, you will focus on how to properly cut and fill your cakes with buttercreams, jams, ganaches or syrups so that you achieve the perfect flavour combinations and well as level and perfect looking cakes. One of the arts to baking a perfect cake is to ensure it is straight and looks as good as it tastes and May will show you how.  If you are an amateur baking, this is the class that will make your cakes stand out and really impress your friends and family!

Taste Testing

During the class, we will have a taste testing session where you will be able to sample and taste different fillings and jams.  You will learn how your cakes can benefit from using quality ingredients.  May will also show you how to create different flavour combinations and how to match up 2 flavours together so they don’t clash on the palette.

Questions and Answer Session

This class is a great opportunity to ask one of the worlds’s leading cake makers everything you can think of about baking cakes. May will be able to answer any cake making cake baking or cake related question you can think of throughout the day!

Award winning cake maker, May Clee Cadman (see Tutors page) is one of the UK’s most talented cake makers.  Her cakes are perfected with a singular care and attention and she is dedicated to finding and using only the purest and highest quality ingredients.  Her clients include many celebrities and top London hotels who all adore her fantastic recipes.  May has a huge working knowledge of baking and cake baking.  She is an established teacher with a worldwide following and is extremely generous with her knowledge and sharing her tricks of the trade.

Equipment

For this class, we provide everything – all the ingredients, all the equipment and tools. All you need to bring with you is:

  • an apron
  • a pen and note pad
  • lunch (we can provide this for you for a £5 supplement)

Pretty Witty Cakes never surprise you with hidden costs unlike other venues so you will not be sent any additional equipment list before the class.  The only things you need to bring are those things listed above.  We will provide EVERYTHING else for you.

Location: Our Baking Master Class is based at Pretty Witty HQ in a bright, spacious and airy 40 foot kitchen in Crowborough (TN6) on the Kent, East Sussex border.

Price: £295 per person.  This includes ALL equipment and ALL cakes (includes VAT where applicable).  The only things you need to provide are those listed above.

Travel: We can assist with all travel arrangements including advising on trains and flights, pick up from the airport or train station.  For those coming by car, we have ample private and enclosed parking at the house.
