Cupcake Basics Class

Our Cupcake Basics class is a one day class where you will learn all the secrets that will enable you to make and decorate perfect little cupcakes.   This class is for beginners or those who feel a bit rusty and want to refresh their baking minds!  This is a baking AND a decorating class. You will be amazed at how much you will learn in just one day and the 12 cupcakes you make from scratch will really impress your friends and family and may even start you on the road to setting up your own cupcake empire!

Equipment

Everyone in the class will be provided with a full set of top of the range equipment.  You will be provided with all equipment including Kenwood KM010 Professional Stand Mixers to work with (thus you can try out a top of the range product before you consider which mixer to buy yourself and we can also advise you on this).  We provide all other equipment, ingredients, tools, cutters, pastes, colours and lots more. You do not need to bring anything with you except an apron and a packed lunch.   The classes are held in small groups so you get plenty of one on one attention.

Class Times

The class starts promptly at 10.15.  Everything is explained to you step by step so there is plenty of opportunity to ask questions.

What you will learn

Cutters and Moulds

You will start the day being taught how to make beautiful and delicate decorations to top your cupcakes in every colour you can imagine.  These include: flowers, hearts, stars, shoes, bags etc. All flowers and other cupcake decorations are made from sugar paste or florist paste so are entirely edible.  We will teach you how to colour the pastes, what you add to make them pliable and non-sticky with a glowing finish and you work with them to achieve the best possible result.  We will teach you about colours  – which complement each other and which to avoid!  Understanding colour and colour schemes is critical to turning out cupcakes that stand out from the crowd.   We will give you lots of tips about this.

You will have lots of cutters, moulds and other tools available to experiment with and Suzi will help you throughout so you can learn how to use them all.

Baking from stratch

Whilst your little flowers and decorations are drying, you will then be shown how to make moist light and fluffy vanilla cupcakes.   Unlike lots of other courses, we let you do all the baking yourself.  We do it this way as this is the best way to learn.   Of course, Suzi will be there to assist at all times and can answer any questions you may have.

Making and piping delicious buttercream icing

Whilst your cakes are cooking, the house will fill with the gorgeous smell of fresh baking – enjoy it!   While the cakes cool, you will then be taught how to make glistening and delicious buttercream icing.  We will teach you how to get the right consistency and YOU make the buttercream and pipe with it. We will also show you how to pipe your buttercream so it looks professional and delicate.  During the piping session, we will show you various different nozzels and once we have demonstrated their effect, you will be let loose to try them all out and practice piping before deciding which style to use on the cakes you have baked.

The Decorations

Once you have decorated your cakes with buttercream, you will be able to decorate them with you your paste flowers and decorations – making each cupcake individually unique to you.  Finally, once you have finished decorating all your cakes, you will be provided with a presentation box to transport your perfect and fresh cupcakes home with you.  If you are travelling by train, you will no doubt find people commenting on your cakes – it happens a lot!  We also find people get home and their family cannot believe that they made the cupcakes all by themselves.

Take Home Fact Pack

You will  be given a fact sheet describing all the techniques you learnt during the day so you can refresh your mind next time you bake.  Of course, there are also lots of tips on our Facebook discussions page

We supply lots of tea and coffee throughout the day and you can take breaks whenever you wish. We have a lovely coffee area attached to the kitchen where everyone can relax during lunch.

You can ask as many questions as you want throughout the day, tell stories to your fellow class mates and have a thoroughly fun time.  It is impossible not to laugh during this day.  It is just so relaxing.

Location: Our Cupcakes Basics class is based in Suzi’s kitchen in Crowborough (TN6) on the Kent, East Sussex border. Manchester/Cheshire Classes are held at The Cheshire Cookery School, Altrincham,Cheshire, WA14 4EP.

Price: £150 (Includes VAT where applicable).

Time : 10:15am – 4:30pm

Travel: We can assist with all travel arrangements including advising on trains and flights, pick up from the airport or train station.  For those coming by car, we have ample private and enclosed parking at the house.
