Vegan, Dairy Free, Soya Free, Egg Free and Gluten Free Chocolate Cake

I have a chocolate cake I would love to share with you that I just love to make. Shhhhhhh don’t tell anyone but it is:

Vegan, Dairy Free, Soya Free, Egg Free and Gluten Free!

The best thing is that it is soooooo easy to make! AND it goes down a treat with everyone! Nobody can guess it is free from almost everything!

Oh and I didn’t say: It is a chocolate cake! 

Ingredients

To make one x 6” deep round cake you will need:

  • 200g Gluten Free Plain Flour
  • 200g Caster sugar
  • 4 tbsp Cocoa Powder
  •  1 tsp Bicarbonate of soda (make sure you pick a Gluten Free one)
  • ½ tsp salt
  • ¼ tsp Xanthan Gum
  • 5 tbsp Vegetable Oil
  • 1 tsp Vanilla Extract
  • 1 tsp Distilled White Vinegar
  • 250ml cold water
  • A bowl
  • A hand whisk
  • Leak proof lined cake tins 

My quick and easy Free From chocolate frosting: (just mix it all together)

  • 25g Free From Margarine
  • 25g Vegetable shortening (e,g Trex/Crisco)
  • 110g Gluten Free Icing Sugar
  • 1 tbsp cocoa powder
  • 2 tsp Water to soften (if needed)

Method

  • Add the rest of your dry ingredients (Bicarbonate of soda, salt and Xanthan Gum)

  • Using your whisk, stir until you can see the cocoa powder has mixed in well

  • Now this is where I needed a bigger bowl as I was making 3 at once for part of a wedding cake! To make more cakes just double, triple, quadruple the recipe if you need to, but make sure you use a big enough bowl

  • Next add your cold water

  • Then pour in the vegetable oil

  • Add in the vanilla extract

  • Then your vinegar (make sure this goes in last as it is what reacts with the Bicarbonate of soda to start the gentle aeration going)

  • Using your hand whisk (I just the love the ease of this recipe, no big mixers in sight!) mix up the dry and wet ingredients until fully combined

  • Pour into your prepared tin/s and bake in a preheated oven at 140 Fan, 160C, 325F or Gas mark 3 for about 50 mins. I always check mine at about 40 mins and then every 10 mins

  • Once baked removed from the tin and leave to cool on a rack. Once cool you can split your cake, but be careful of those off cuts…. They are irresistible!

  • Fill with your favourite Free from everything frosting and enjoy!
