Fondant and Flavoured Cupcake Class
Our Fondant and Favours Cupcake Class is all about working with fondant as well as trying different flavoured cupcakes. We have created two brand new recipes –‘Zesty Lemon cupcakes’ and ‘Tangy Orange cupcakes’ especially for this class. We also go over other recipes such as lime cupcakes, strawberry cupcakes and apple cupcakes and well as flavoured buttercream and a softer, lighter butter frosting. You get all recipes to take home in a Fact Pack.
This class is suitable for beginners or those who feel like they need a little help working with flavours or fondant/sugar paste. This is a baking AND a decorating class. After this class you should feel very confident about working with flavours and going off to experiment with new flavours of your own as well as working quickly and effectively in fondant.
The Fondant and Flavours Class is a one day class starting at 10.15 and finishing around 4.30pm. Everything is explained to you step by step so there is plenty of opportunity to ask questions. The classes are held in small groups so you get plenty of one on one attention.
Everyone in the class will be provided with a full set of top of the range equipment. You will be provided with everything you need including Kenwood KM010 Professional Stand Mixers to work with (thus you can try out a top of the range product before you consider which mixer to buy yourself and we can also advise you on this). We provide all other equipment, ingredients, tools, cutters, pastes, colours and lots more. You do not need to bring anything with you except an apron and a packed lunch.
What you will learn
Baking with Flavours
This class focuses on flavoured cupcakes. During the day YOU will bake from scratch choosing either Zesty Lemon Cupcakes or Tangy Orange Cupcakes. We will teach you how to avoid dense or heavy cupcakes (often a side effect of adding flavours) so that you will be able to turn out fluffy light and summery cupcakes packed with zesty, zingy flavours that will wow your friends and family. You will also be taught a few tricks of the trade that will enable you to go off and experiment with your own unique flavour combinations. Of course, we will be there guiding your baking all the time in case you have questions and to ensure that we correct any potential mistakes before they happen!
During the day, you will select which recipe you want to make but we will teach both recipes during the class and give you both recipes to take home with you.
We will teach you to work with flavours in buttercream and show you what to do to get the right flavour without compromising the consistency. We will show you our tried and tested tips and methods for the perfect light, fluffy and smooth buttercream. When working with flavours you also need to ensure the buttercream “matches” the cupcake – we will show you how.
We will also show you how to make flat and domed cupcakes which can present different challenges when your buttercream has flavouring in it as a result of the altered consistency.
We will also discuss other frostings including a really light buttery frosting for summer time (lighter than buttercream).
Working with Fondant/Sugar Paste and Designing
Alongside flavours, we will focus on mastering fondant in the class.
We will show you how to work free hand and how to work with cutters and other tools to create unique designs for your cupcakes. We have carefully designed our own original and unique cupcakes for this class which we will show you how to make. But, as with all our classes, we go one step further and show you how to design for yourself so you can start to build up your own set of unique cupcakes.
We will help you throughout so you really get the most out of your class.
At the end of the day, you will have completed 12 fondant cupcakes which both look pretty and taste fabulous. You will then be provided with a presentation box (and given a few tips on how best to present cupcakes) to transport your perfect and fresh cupcakes home with you. If you are travelling by train, you will no doubt find people commenting on your cakes – we have had quite a few students tell us they received orders on the train or plane home! No doubt you will join them in receiving such compliments.

Take Home Fact Pack
You will be given a fact sheet describing all the techniques you learn during the day so you can refresh your mind next time you bake. You will also be given the recipes from the class and a few more. Of course, there are also lots of tips on our Facebook page
We supply lots of tea and coffee throughout the day and you can take breaks whenever you wish. We have a 600 square foot kitchen so plenty of room.
You can ask as many questions as you want throughout the day, meet new friends and have a totally fantastic time. It is a really relaxing day and it is impossible not to have fun.

Travel: We can assist with all travel arrangements including advising on trains and flights, pick up from the airport or train station. For those coming by car, we have ample private and enclosed parking at the house.
